Young Applejack will become a mature spirit after years of aging in the barrel.  We don't know how long at this point, but, for starters, somewhere between two and four years should do.  Then in another three or four, the flavors we hope to bottle should be a surprising delight! We won't have any of this type ready for a little while, but it is fun to see the aging process begin.  The nose in the cask starts to mellow, the color imparted by the oak deepens and our little rack house is beginning to see its own "Angel's Share".  This brings smiles to me and Tom, as well as the few lucky visitors who have the opportunity to indulge in the sensual delight.

We are looking forward to our mature Applejack as much as you are, so please be patient with us!
